1 Minute 1 Step RV Chocolate Fudge

chocolate fudgeSo delicious! This completely raw vegan chocolate fudge can be made in under a minute! (depending really on how fast you move hehe)
I find myself always having late night cravings for something sweet and smooth. What has that texture and enraptures my taste buds like so? You got it - chocolate. Even better, dark chocolate. That smooth consistency that literally just lightens up my face can be made so easily and it is healthy too!
Imagine yourself watching a movie, variety show, or an episode of your favorite series at night and you just feel like snacking on something sweet. Or perhaps you're looking at photos of food and recipes such as this one, well then problem solved - the 1 minute chocolate fudge in 1 step!
Recipe:
You'll need:
  • 3 tablespoons of Raw Cacao Powder
  • 2 teaspoons of Agave Nectar or Raw Honey (but that wouldn't be vegan)
  • 2 teaspoons of Coconut Oil (I prefer to use the unrefined one)
Directions:
  1. Just mix all of the ingredients together!
  • Note that it will seem dry at first and you'll have the urge to add more oil or water or something, but don't. Just keep mixing and it'll soon have a creamy texture. The color will turn darker and it will become smoother and moist.
Note:
- Feel free to double the ingredients amounts to have more and to wrap it in parchment paper or wax paper and pop it in the fridge or freezer. Then it will harden and taste absolutely amazing!
- For a crunchy texture to it, you can add chopped almonds (or any other nut/seed) to the mixture or rolled oats if you prefer for it to have less fat.

Refreshing TripleBerry Mint Smoothie

Ever wanted to drink something mint-y, but not really the whole chocolate mint ordeal or a straight up toothpaste-tasting drink?
Well, I have and I was craving something that would leave me feeling cool & refreshed during this hot summer.
What I have here is a smoothie that felt so refreshing and chill as I drank it, while satisfying my sweet tooth at the same time. I felt clean, relaxed, and satisfied afterward hehe~
Recipe:
You will need:
- A Blender
- 2 Cups of Frozen Berries (I used mixed berries: blueberries, blackberries, and raspberries)
- 1/2 Cup or 3 Sprigs of Fresh Mint Leaves
- 1 Cup of Almond Milk (or any milk, but I prefer non-dairy)
- 2 Tablespoons of Raw Agave Nectar or Honey (Adjust depending on how sweet you want it)
- Cacao Powder optional 
  • (I was hoping for a chocolate-y taste like mint chocolate berry, but you need to put in a lot for it to really make any impact. If you want that taste, opt for chocolate chips instead.)
Note: Yields about 3-4 cups, so that would be 2-4 servings depending on how much each person drinks. I personally like to drink a lot hehe
Directions:
  1. Blend/Puree the Frozen Berries and the Almond Milk first
  2. Add in the Mint Leaves and your sweetener(s)
  3. Blend the mixture to the texture that you prefer. If you blend it for longer, it will become runny though so beware~
Drink and enjoy while relaxing out in the Sun~

Date-ing Fruit Smoothie

Get it? the Dates and the fruit are interacting with each other to the point of dating hehe
Okay, I know lame on the word play, but I sort of did my best hehe. If you guys have any better suggestions DEFINITELY feel free to let me know ^^
I ran out of bananas, but wanted to make a Berry smoothie. I have frozen mixed berries and personally, those can be pretty sour. I did not want to use any sugar, honey, agave nectar, or anything so I turned to dates! What's so great about Dates is that they can easily replace any sweetener! That's right, no refined sugars or additives!
Anyways, this was definitely a sweet, refreshing smoothie that I made for myself, mother (age of 60), and her student (a young girl). We all enjoyed this, so this is definitely a drink that is perfect for all ages~ Had this hydrating drink for breakfast after a HIIT workout hehe
Anyways here's the recipe:
Recipe:
You Will Need:
- A Blender
- 10 Pitted Dates (I used organic)
- 3 Handfuls of Mixed Berries (I used the frozen kind)
- 1 Cup of Almond Milk (I used Almond Breeze Unsweetened Vanilla)
- 1/4 Cup of Water
-Makes two glasses-
Directions:
  1. Blend your Dates, Water, and Almond Milk together until it becomes this frothy, smooth drink. (This can be a drink on its own. So sweet and delicious)
  2. Add in the Berries and blend(Frappe) until it's this thick, creamy drink
  3. Pour and enjoy~
I don't have a picture this time because I was in a bit of a rush, but it basically looks like a Berry smoothie, only it has that delicious creamy sweet taste that comes from the almond milk and especially the dates.

2-Ingredient Banana Pancake

This is so sweet and honestly you could eat this as a snack. It definitely tastes like a softer version of a pancake! Without all that refined sugar and additives! How awesome is that? And it is sooooo easy and delicious~
Recipe:
You will need:
- 1 Ripe Banana
- 2 Eggs
- Cooking oil (I used Grapeseed Oil as that's what I had on hand)
- Toppings such as berries, raw agave nectar, etc optional
Directions:
  1. Mash the ripe banana in a bowl first
  2. Add in the 2 eggs and whisk the mixture together. If you do not have a whisk, you can also just use a spoon or other utensil. Mix well
  3. Heat up the pan and add the oil
  4. Set the heat to Medium heat and add in the "pancake mix"
  5. Flip after a few minutes
  6. Cook to however brown you want it
  7. Top and enjoy~

Mushroom Pizza Bites

IMG_1914I'm pretty sure everybody has craved pizza at one point in their lives. Unfortunately, pizza is not very healthy if consumed in large amounts and it just has so much sodium and enriched, refined flour etc.
So, here's something that tastes like pizza bites, but tastes even better! It's amazing!!! My friend and I made these today. We were both like "oh my gosh...amazing" and just devoured these bad boys~
Recipe:
You Will Need:
- 1 Pack (6) of Portabellinis (hehe, they're mini Portabella Mushrooms)
- Pasta Sauce of your choice (or you can choose to make your own)
- Shredded Cheese of your choice (I used mozzarella)
- Basil to Sprinkle on top

Directions:
  1. Preheat your Oven to 400 degrees Fahrenheit
  2. Wash your portabellinis and then scoop out the stem. Can scoop out the gills if you wish. I left mine alone
  3. Pour in some sauce into it
  4. Add LOTS of that cheesy goodness on top
  5. Sprinkle in the Basil
  6. Place the Mushrooms into the oven for 10-15 minutes or until the cheese melts
  7. Take it out to cool for a bit and enjoy~

Reminder

Reminder
sometimes…actually that’s an understatement. Always, I forget when I’m eating these raw vegan desserts that they are called “dessert" for a reason. No matter how healthy they are, if they’ve got things like agave nectar and coconut oil, I should be limiting how much I consume. But, they just taste so good and my body does not feel repulsed after eating these desserts that I forget. I need to remind myself that even though they’re healthy, everything in moderation ><
I definitely find it hard to apply that thought process with fruit…because I mean come on, it’s nature’s gift to us.
It's hard to reject the goodness that this Earth has. I mean like all the time I am amazed at all the great dishes and desserts that I can make without all that processed man-made stuff!

Raw Vegan Brownie Recipe

Moist & Perfect for the Sweet Tooth!



So this Raw Vegan Brownie is ABSOLUTELY perfect for when you are craving a brownie or anything chocolate/sweet! Especially if you do not have the time to bake it or just cannot wait!

It's raw, vegan, and healthy! And what's better? It actually tastes like a brownie!

Recipe: (to make a little - feel free to add more)

- 1 cup of Pecans or Walnuts
- 1 cup of Pitted Dates (feel free to add more for more stickiness and sweetness)
- 5 tablespoons of Raw Cacao Powder 
- 4 tablespoons of Rolled Oats (can substitute with unsweetened shredded coconut)
- 2 tablespoons of Raw Agave Nectar
-  a pinch of salt

Directions: 

-In a blender or food processor, blend/process the pecans/walnuts until it is almost powdery but still has some little chunks/pieces

-Add in your dates and blend/process until the two combine

- Add in the rest of your ingredients and blend/process until the mixture becomes a nice brown and combines together well

- Take out the mixture and press into a pan so that it sticks together

- Put it into the refrigerator for a few hours so that it sticks together better (can eat it without cooling as well)

-Cut and serve!

When I bought my 40 lb box of bananas from Whole Foods.
Bananas are ABSOLUTELY amazing! Frozen, whole, mashed, etc. Love them! 

Succulent Lychees



Lychees are one of my favorite delicacies~
Yes, a delicacy it is - not just simply a fruit.
I mean look at the tender, juicy, pure flesh that tastes so sweet when you sink you teeth into it. How, the peel embraces the tenderness like the petals of a water lily.

Basically yum~ More please!

Spiralized Noodles Attempt 1


Finally made my first bowl of raw vegan noodles! :)
my noodles: squash and cucumber
sauce: garlic, basil, oregano, avocado, cherry tomatoes, lemon juice
Result: my family tried it and they liked it but felt like it was bland and tasted basically like salad.
my response: well duh, it’s like a salad . but I agree that it was bland. Probably because I did some random mix  for the sauce, but I should have added some other flavors or something. 
Anyways, I’m going to try fruit noodles next :D

Hello

Hello! I currently have the blog: Whimsical Devotee on Tumblr.Com
I have recently been very interested in veganism - specifically raw veganism. I tried fruitarianism for a bit and now I'm progressing slowly to be a long term 80/10/10. For now though, I'm trying out vegan recipes including raw vegan recipes. I just love to experiment with food, eat it, and share with everybody else! I have so much enthusiasm concerning such things as health and food and yet it seems that my friends and family are more interested in eating what I create than hearing my thoughts on it. This is where blogging comes in! ^^
